  Ingredients

             Boiled Rice or idly rice  : 2 cups
      Urad Dal                  : 1 cup
      Salt                      : for taste 
      
 Preparation


  1.  Soak the rice and dal separately for 3 hours.
  2.  Grind the rice and dal separately.
  3.  Mix both of them and add salt for taste.
  4.  Allow the batter for ferment up to 10 hours.
  5.  Steam the batter in idly cooker for 10 mins.




 Kanchipuram Idly




                 



  Ingredients

      Curd          : half cup
      Pepper powder : 1tsp
      Ginger        : 1tsp(chopped)
      Cashew        : 1tsp(broken into small pieces)
      Cumin seeds   : half tsp
      Green chilies : 4(cut into small pieces)
      Curry leaves  : 6-8
      Oil           : 2tsp


       
  Preparation

  6. Then add ginger,cashew,green chilies,pepper powder,curry leaves.
  7. Now put the mixture in the batter along with curd.
  8. Steam the batter in the idly cooker for 10 mins.


Fried Idly


         



 Ingredients

    Idly            : 4(cut them into small pieces)
   Onion Big       : 1(cut into small pieces)
   Tomato          : 1(cut into small pieces)  
   Green chilies   : 3
   Garlic paste    : 1tsp
   Ginger paste    : 1tsp
   channa masala    
   powder          : 2tsp
   Coriander leaves: half cup(finely cut)
   Mustard         : 1tsp
   Salt            : for taste
   Oil             : for deep frying
   


Preparation
  

  1. In pan, heat the oil and deep fry the idly pieces till it becomes golden brown and keep aside.
  2. Heat the oil(2tsp) in another pan,add mustard.
  3. Then fry the onion,tomato,green chilies,ginger and garlic paste and channa masala powder.
  4. Then add the salt and coriander leaves.
  5. Finally add the fried idly into mixture. 
  6. Mix them well.
  7. Serve hot with onion raitha.


Rava Idly
   




                      

 Ingredients

      Rava              : 1 cup
      Mustard           : 1tsp
      Ginger paste      : 1tsp
      Channa dal        : 1tsp
      Green chilies     : 2(finely chopped)
      Coriander leaves  : half cup(finely chopped)
      Baking soda       : big pinch 
      Carrots           : 2(grated)
      Curd              : 1 cup
      Salt              : for taste 
      Water             : 1/4 cup
      Ghee or oil       : 1tsp


Preparation
      
     

  1. Roast the rava till it becomes brown
  2. Heat the oil,add the mustard.
  3. When they started popping add channa dal for sometime.
  4. Then add ginger,green chilies,salt.
  5. Switch off the heat, add the rava,curd,coriander,baking soda,carrot and required amount of water.
  6. Mix well, keep aside for 30 mins. 
  7. Steam the rava batter in idly cooker for 10 mins.
  8. Serve hot with coconut chutney.
